The story of M begins in November 1989, when Michelle Garnaut opened M at the Fringe in Hong Kong's historic Ice House. As one of the then-colony's most creative caterers, Michelle had already acquired a reputation for culinary excellence, delivered with a style and panache that would become a signature of the M Restaurants.
At M at the Fringe, culinary inventiveness - always filtered through the prism of classical French technique and always of uncompromising standard - is married with a stylish setting in the warm, intimate "New Romantic" decor of the wedge-shaped Fringe Club, located in the city's former Ice House. M at the Fringe pioneered a new style of restaurant and quickly became one of Hong Kong's favourite dining spots and a regular on the city's top restaurant lists.
